Be careful growing your own. Of course, they are usually perfectly safe. But if your courgette tastes at all bitter, discard it straight away. If cross-pollination occurs, they can produce cucurbitacins, which are toxic to humans and can cause serious illness. When grown commercially, it’s very rare. Not only are they raised from hybrid seed but professionals ensure they’re not cross-pollinated with plants that could cause toxicity.
