Grilled Veggie Sandwiches

Delicious and healthy sandwiches with grilled veggie sandwiches tossed in oil and vinegar on crunchy, grill toasted bread. Any bread can be used, but I like to use sourdough. Feel free to add any veggies or mushrooms to your liking.

Instructions

Step 1
Spray griddle with oil (I like to use avocado oil) and heat to medium, or prepare a grill with medium heat.
Step 2
Chop veggies into suitable sizes for grilling
Step 3
Mix oil with spices and toss the veggies in mixture
Step 4
Grill veggies. Start with green peppers and onions, as they take similar amounts of time. Grill tomatoes and zucchini.
Step 5
Mix together the left over oil and spices with vinegar.
Step 6
Toss grilled veggies in oil, spices, and vinegar.
Step 7
Spread mayonnaise on one side of each slice of bread (this works purely as a fat to make the bread crunchy and stop it from sticking, butter can be used instead) and place on grill. Grill mayonnaise side down until crispy.
Step 8
Place veggies between bread and enjoy
