When mixed together, the egg yolk emulsifies or binds the oil and acid together to form a thick, creamy liquid. From there, it can be used in sandwiches, chicken or tuna salads, deviled eggs, tartar sauce, aioli, and so much more. Its versatility is what makes it such a star player in the kitchen. But you may be wondering, is mayonnaise all that healthy? Because mayonnaise is mostly made from oil, it’s both high in fat and calories. One tablespoon of mayonnaise is equal to 100 calories. Mayonnaise does have some healthy nutrients, including vitamin E and vitamin K. But it should still be consumed in moderation because it’s so calorie dense. When it comes to storage, mayonnaise should always be stored in the refrigerator after it’s opened. Refrigerated it can last up to two months. Unopened mayonnaise can be stored in the pantry at room temperature for about three months.
