Italian or flat leaf parsley is characterized by its flat leaves. This variety of parsley has a fragrant, fresh, and slightly peppery taste. It is primarily used for cooking. With ruffled leaves, curly leaf parsley has a milder, slightly bitter taste. It can be used in cooking but is mainly used as a garnish. Parsley may also come in another form: dried. Although dried parsley lacks the same robust flavor as fresh parsley, it's a convenient alternative, particularly when it comes to shelf life. Dried parsley can last up to a year, whereas fresh parsley only lasts a week or two in the fridge. Dried parsley is great for incorporating into stews, sauces, and soups. It’s best suited for dishes that require long cooking times, as it will retain its flavor over high heat. Before using fresh parsley in your dishes, be sure to rinse it thoroughly to wash off any dirt. Once washed, roughly chop both leaves and stems. Although you can pick off the leaves, there’s no need. In fact, parsley stems actually contain more flavor than the leaves. It's best to only chop the amount needed for a dish and to keep the rest of the leaves on the stem. Any unused parsley should be wrapped in a damp paper towel, sealed in a plastic bag, and kept in the fridge where it will stay fresh for about 3-5 days.
