Tortellini Soup with Italian Sausage and Kale

One of my go tos. Always a pleasure, super easy

Everything you want dinner to be! Simple. Tasty.

I added the tomato paste first and browned it a bit and mixed it around before all the stock and crushed tomatoes. Also recommend breaking down the sausage as much as you can in the beginning before adding in the onions! Then add garlic last for that step.

Very tasty recipe. Could only find normal pork sausages so removed the skin and added Italian herbs. Definitely needs the chilli flakes for the richness of flavour. Also added a little paprika and extra tomato puree and it worked nicely.

Absolutely amazing!! I was skeptical at first when I only saw salt for the seasoning, but it was perfect. Added about half a cup of freshly grated parmesan to the pot at the very end. Also only needed about half the bundle of kale, but wasn't sure what amount they defined as a "bundle" anyway.

Next time, would split the soup in half and freeze half without tortellini. Would also only make enough tortellini for that days portions because it does go soggy!

1. Use spinach instead of Kale 2. Add mushrooms to dish - one can 3. Used dry Tortellini - couldn't find fresh, refrigerated Tortellini. Came out great, but will try with fresh. 4. Use two medium sized onions. Chop onions, put one chopped onion in and sauté with mushrooms, garlic and sausage. Add the second chopped onion right before adding the spinach & Tortellini at the end.

Accidentally used hot sausages and it was great!

It's thicker than I expected; will try diced tomatoes instead of crushed next time.

I always make this with a can of coconut milk instead of heavy cream because I always have it in my cupboard (cream, not so much). Delicious and hearty weeknight soup. Serve with garlic cheddar biscuits or beer bread.
