Avocado Chicken Salad

Delicious. I fried the onions to reduce because I don’t like it too spicy.

Excellent lunch dish that can be made for a big group

Add black beans, season chicken with pepper, salt, garlic powder, paprika, and chili powder. Sear chicken then bake in oven with butter and rosemary. Eat on tortilla with Chipotle aioli sauce

Used Tofu instead

This was really good. I added some pomegranate molasses because I felt like it was missing something, and it was perfect! It was really filling. I made this as a meal prep so we’ll see how well it saves.

Hand shredded or chopped. Don't use mechanical shredder. Needs some chopped Beacon and maybe some chilli powder

Add more citrus, some garlic or garlic powder, and chili powder. Delicious.

I forgot to take a pic when I had finished, so there's only a bit left, but it looked really nice. I added some lettuce to give it a bit more volume and removed the onions because I'm not a fan 🪭

I added pinto beans (would have used black if I had some). I seasoned it with tajin, cumin, pepper and garlic salt. I added tomatillos, feta, and a few tomatoes. Served on salad.

Added black beans, spinach and salsa and had it on a wrap. It was very tasty with the salsa on it.

Substituted the olive oil for garlic oil, lime for a 1tbsp lime and 1tbsp lemon. Added roughly 50g of jalapenos and 75g of feta cheese. Flavoured the chicken, cooked in the air fryer, chopped up and mixed with the salad. Served with slightly salted tortilla chips. My usually fussy 10 year old loved it.

It was good! I added lettuce, cherry tomatoes, and Mexican blend cheese.

We would add jalapeño next time and give it time to chill so the flavors could mix.

It was good but needed more flavor I ended up adding the heardz Avacado salsa/hot sauce and it made it less dry and gave it that little bit of flavor it was missing!

I added about half a cup of diced bell pepper. My vegetarian 11 year old said that it was pretty good (without the chicken).

It was incredibly easy and quick to make! I boiled chicken with a vegetable broth mix and added dill for extra flavor. This is definitely going to be my go-to meal when I am short on time. I forgot to add red onion, but I think a bit of it would make it even better.

Saw this recipe this morning when craving something light yet filling and healthy & went to the shop to buy ingredients. I've now just eaten it - it's super tasty and easy to make, would highly recommend! Someone else mentioned serving it on a lettuce leaf; I think that would be a great idea also. I grilled my chicken and cut it into strips instead of shredding it, and it was delicious. I think I would leave it the red onion next time. The one I used was really strong, and I'm not a fan of raw onions, so it overpowered the other flavors.

Good. Needs fresh cilantro. Halfed the oil. Needs both avocados. Doubled the corn, whole can.

I didn't have corn so I used sweetcorn and it was so good with a drizzle of honey and some sweet chill with salad dressing, it was delicious

Added sliced baby spinach leaves, and used a Mexican corn mix (corn and some beans), and was very tasty.

Added a lil olive oil mayo. It's half the fat of reg. Mayo. Plus i added some juice from canned jalapeños n a some of the jalapeños from the can. And I also roasted the corn in the oven. Very delicious mexicano stilo.

It was good. I will make it again but will decrease the amount of coriander and I did not have lime just lemon, so will try to find a lime. And I added some paprika. But so easy and quick to make.

We liked it! I added minced garlic to it. However, I ate it with only white rice and felt like it was missing something, like too dry. But, my family had it with the works in a burrito and said it was fire. They added the rice, sour cream, salsa, and lettuce.

I added black beans, bacon, shredded cheese and tomato. Cooked everything minus the avocado and tomatoes. Threw it on a tortilla and it is now my all time favorite wrap!

I didn't have cilantro, corn, or red onion, so I left those items out. Also, instead of olive oil, I used balsamic vinaigrette. I also added cheese to mine.

Quick meal

A fairly quick and easy make, this was very tasty, though you’ll probably want a side with it, or you can use it as a pita pocket filling with some greens for a nice lunch.

We just cooked the chicken in the crockpot, and then fried some allergen-free corn tortillas in avocado oil- delicious!!!

I used baked chicken which wasn't as good as rotisserie chicken and this is definitely more of a side to me than a full meal. Tastes great though

Added a vegan pesto and used vegan mozzarella. Hubs doesn't like raw onions so used powder instead. Also added nutritional yeast. Def will make again. Was delicious

Added chives, coriander and parsley. Added both lime and lemon juice. I had the chicken on the side. Turned out amazing!

So easy and so good! This took maybe 15 minutes to throw together, I added some chili pepper flakes for a bit of spice, didn’t add any olive oil then tossed it into some tortillas and they make the perfect meal!

Added garlic and onion powder! Serving size is EXTREMELY SMALL! We made 9 servings and it made 2 bowls of food, it was dinner for my husband and I one night. Hoping to have left overs but had none😭 would be a go to in larger servings

This salad was a big hit! So, I've been trying to get my man to get on Whisk every 2 weeks to find recipes he likes and add them so I know what to make him, and I don't have to guess what he might like. Mostly because I'm a pretty good cook, but when I get depressed I struggle with meals. So this site has helped a lot. Anyway, he picked this meal, and I would have never guessed he wanted this, but he did, and he loved it. I made the chicken breast myself with my own blend of seasonings, added black beans like another reviewer suggested, and added some chilies, not too many, but everyone loved it, and I was so glad. It was especially refreshing after the 112-degree weather we had today.

It was pretty easy and really delicious! I used blackened chicken seasoning and added black beans. Also used it in a wrap and used chick fil a lime avocado dressing to dress it up. Sooooo good

Simple salad that tastes great, I added tomatoes and carrots for some extra flavour. I added the avocado to my salad on the day of eating so they stay fresh. However - 👎🏼 for the instructions which was covered in ads and in a messy format.

I made it as a whole dish for dinner. Seasoned my chicken cubes with Jamaican jerk and then warmed the onions, corn and added zucchini with lime juice and cilantro in the dish! Drizzled jalapeño queso on top! Next time I’m using cajita cheese too!!! YUMMM!!!!

This is one of my favorites! I added mayo and skipped the corn. It's so good! Make sure to season it well. I used creole seasoning. 10/10 made delicious wraps.

it was great! I ate it with bread, like sandwiches :) if you don’t add mayo it might be a little dry. I don’t get the people saying that corn isn’t a good match with this recipe. Corn is always a good idea. It’s corn!

We added buffalo sauce to make it into chicken dip.

We added cherry tomatoes and lots of spinach to make it more fresh and light, tastes delicious!

We used grilled chicken thighs & grilled corn on the cob (cut off the cob) with Trader Joe’s Elote Spices. Added Jalapeños for some spice. Served over wild rice! One of our favorites. We make to have leftovers the next day.

Fairly basic recipe! I use a tomatillo salsa for the sauce and it was very tasty, though a tad bland. I think I will experiment with spices next time to try to give it a little more pizzazz.

I marinated the chicken breast in a citrus vinaigrette, then took some of the cooked juices and whisked it together with some lime juice for over a salad. Added tomatoes and that was it. Served with corn chips. Absolutely delicious. Will make again.

Made this with some leftover chicken and found it very tasty. Serving size was not too large, though, so I served on a bed (1 cup) of fresh spinach for lunch. Stored in a glass bowl and secure lid and was still great.
