I normally advocate for "as fresh as possible", but you can swap the rotisserie chicken for canned chicken breast--just make sure to add some salt, pepper, and your favorite spices. I have not yet tried reheating from freezer, but these are fantastic straight out of the oven. Note: I also did corn +green beans in addition to the peas and carrots.

Great recipe! I didn't have the frozen peas & carrots, but I did have broccoli, cauliflower, carrots & cream corn. My muffin pan is more like a brownie pan, but the crust still came out good. I also added some shredded cheese on top the last 5min.
