This recipe is totally keto and 100% amazing. We eschew the traditional stuffing vehicles (squash, zucchini, etc.) and use an onion instead because 1) it looks great 2) it mellows out a lot when cooking 3) it pairs so well with the beef. Enjoy that special sauce, too!
