½ teaspoonsalt

¼ teaspoonground black pepper

1 tablespoonolive oil

1 tablespoonbutter

1 poundground chicken
or ground turkey, ground beef or mild italian sausage, I used ground chicken in the images

8 ouncescremini mushrooms
sliced

1yellow onion
small, diced

1 ribcelery
diced

1crisp apple
sweet, peeled, cored and diced

2cloves garlic
minced

2 teaspoonsthyme
fresh chopped, or rosemary or a mix of both

⅓ cupshredded parmesan

1 cupshredded cheese
I do a mix of mozzarella with sharp cheddar but any other cheese works
