Ingredients

4 cupschicken stock
or vegetable

2 x 14.5 ozcans diced tomatoes

2 Tbsptomato paste

¼ cuppesto

2carrots
diced

1 cupcelery
diced

½ cuponion
diced

3cloves of garlic
minced

1 x 15 ozcan red kidney beans
drained and rinsed

1 x 15 ozwhite cannellini beans
can, drained and rinsed

1green zucchini
large, diced

1 cupgreen beans
diced

1 tspdried oregano

½ tspdried rosemary

½ Tbspkosher salt

black pepper
freshly cracked, to taste

2bay leaves

9 ozgnocchi
prepared as directed

3 cupsbaby spinach

fresh parsley
for garnish

shredded parmesan cheese
for garnish, optional
Instructions
Step 1
Add stock, diced tomatoes, tomato paste, pesto, carrots, celery, onions, garlic, zucchini, green beans, oregano, rosemary, and bay leaves to a large slow cooker
Step 2
Season with salt and pepper and cook on low heat 6-8 hours or high 3-4 hours **
Step 3
Add in the beans and cook for another 15-20 minutes
Step 4
Stir in the cooked gnocchi and spinach and cook for another 3-5 minutes until heated through. Remove bay leaves
Step 5
Serve topped with parmesan cheese, fresh parsley & some more freshly cracked black pepper
