Ingredients: 2 English cucumber, rinsed; 1 handful of cherry tomatoes, halved; 2 oz. of low-fat feta cheese, crumbled; ¼ cup of Kalamata olives (optional); dressings; 1 tbsp. of wine or balsamic vinegar; 1 tbsp. of virgin olive oil; 2 tbsp. of lemon juice; ½ tsp. of dried oregano; 1 garlic clove, minced; pinch of salt and pepper

A refreshing summer salad, perfect for all occasions. To make cucumber noodles, you may need a vegetable spiralizer. You can use a mandolin, but it will create “straight” cucumber slices whereas spiralizer will create curly cucumber “noodles”.
