One Pan 5 Ingredient Pesto Orzo w/ Chicken Sausage

Ingredients
4 servings

1 tablespoonextra virgin olive oil

12 ozChicken Sausage
I used Tomato Basil Mozzarella flavored chicken sausage

1 ½ cupsOrzo Pasta
uncooked

3 cupsChicken Broth
more as needed

3 ozarugula

½ cupBasil Pesto
I used the pesto from Costco, can use homemade

Fresh Basil
optional to serve

Parmesan Cheese
optional, to serve
Instructions
Step 1
Cut chicken sausage into 1/2 inch rounds and cut the rounds in half
Step 2
Heat olive oil in a large high-rimmed sauté pan over medium heat. Add chicken sausage and cook for 3 minutes until they start to get browned. Add uncooked orzo and toast for another 2 minutes.
Step 3
Pour in chicken broth and bring to a boil. Turn down to a simmer and cook, stirring occasionally, until the orzo is cooked through and most of the liquid is absorbed or about 10-15 minutes. Add more broth as needed.
Step 4
Once the orzo is cooked and most of the liquid is absorbed, add arugula. Stir to combine and wilt the arugula. Add the pesto and stir to combine.
Step 5
Serve immediately. Optionally top with fresh basil and parmesan cheese.
