We love this recipe! The enchilada sauce is delicious - we always double the sauce recipe because it's so good.

My daughter loves these, I usually add meat to mine, I've made this many times. Kids prefer beans and cheese.

Very good. I only made 6 enchiladas and I cut the enchilada sauce recipe in half and it wasn’t too much. I used a can of refried beans that I doctored up. The enchilada sauce was really tasty. Will make again! Great vegetarian meal option.
