The Carburrito:
The Beans:
1 Tbspoil
1onion
medium
1can pinto beans
1can black beans
4cloves garlic
1stockpot
400mlwater
hot
2 Tbspwhite wine vinegar
2 tspsmoked paprika
2 tspcumin
½ tspsalt
1 tspwhite pepper
½ tspnutmeg
The Guacamole:
1avocado
0.5onion
finely diced
2cloves garlic
crushed
0.5juice of lemon
1chilli
finely diced
25gfresh coriander
½ tspsalt
The Salsa:
3vine tomatoes
ripe
1onion
1red pepper
2red chillies
3 scotch bonnets my choice
25gfresh coriander
½ tspsalt
1 tspsmoked paprika
0.5juice of lemon
3garlic cloves
2 tspmango chutney

Instructions
Step 1
1. For the beans, dice the onion, fry in a tbsp of oil for 5 minutes until soft. Add the garlic, salt, and spices, and fry for 2 minutes, then add the rest of the beans ingredients and simmer for 30 minutes to an hour.
Step 2
2. For the guac, dice the onion, finely chop the coriander, crush the garlic, and dice the chilli. Mush the avocado with a fork and combine all the ingredients.
Step 3
3. For the salsa, char the veg for 2 minutes on a gas hob flame to slightly blacken. Blend it up with all the other ingredients.
Step 4
4. Sandwich the beans between the 2 tortilla wraps, and top with rice, fries, salsa, guac, 1/4 of the cheese, and hot sauce. Fold the sides over and wrap around the fillings, and place seam side down in a pan on medium heat and cook for 2-3 minutes, before rolling around to colour all the sides. Slice open to see the cross section and enjoy!
