Beef Wellington is a dinner party showstopper. Its golden buttery crust alone is enough to elicit oohs and aahs from your guests. Then you slice into it, revealing a glossy layer of mushrooms, rosy-pink prosciutto and then perfectly cooked blushing red beef. While traditionally beef Wellington can be an intimidating dish, our recipe uses a couple of shortcuts that makes it much more approachable without sacrificing any of its majestic qualities. No spending hours simmering down a classic jus, instead we serve this big boy with store-bought gravy that is spiked with horseradish – a nod to its British history. We also make use of the indispensable food processor to make light work of chopping the mushrooms into perfectly even pieces. The best thing, this beef Wellington recipe can be prepared and left to chill in the fridge overnight. Then after only 30 minutes in the oven you’ll be chowing down on this retro masterpiece.
