Slow Cooker Mexican Chicken Soup

Go to for mid week big meals that last !

Great! Made wonderful leftovers for lunch.

This is basically chicken tortilla soup without the tortilla strips. Note: Coriander is the Cilantro seeds. Just use the leaves. The "capsicum" is a red bell pepper.

Used beef instead but still delicious

Cooked mine on the stove and used only 1 can of corn and beans plus a 400g bottle of passata but kept the chicken and stock amount the same. Mine was less soupy which I'm happy about and I added a tiny tin of adobo peppers while cooking. Also highly recommend pickled Jalapenos as a topping alongside the other recommendations 😊

Good recipe, added a tablespoon of chipotle chili spice and some sugar for the tomatoes, also fried the chicken with the onions and added all the spices and herbs in this step.

This is delicious! I put mine on high for 5 hours and used 200 grams more chicken. Once cooled, I freezed in zip lock bags for easy dinners. Instead of chips, I have been having rice too. Will make this on rotation.
