Step 1
I soaked dried beans in a pot of water overnight (because I didn’t have canned ones). The next morning I drained them and cooked them on a low boil for a couple of hours in about a cup of chicken broth and some water.
Step 2
In the crockpot, I placed the chicken breasts and then covered them with the salsa and the taco seasoning packet. A couple of hours on low.
Step 3
With forks, I shredded the chicken and then added the corn, the beans and SOME of the liquid, and the small can of tomato sauce. I added the chicken broth. 3 cups to start.
Step 4
Heat all together until simmering through.
Step 5
My kids will probably add shredded cheese or tortilla chips.
