Spinach Chicken Casserole with Cream Cheese and Mozzarella

Yummy!

I used too much cream cheese (8oz) on two split breasts (4 pieces). Next time, I will use 4oz or leave cream cheese out altogether.

Was great. Added lemon juice to the chicken and spices also.

Delicious! I think next time I'll go a little lighter on the cream cheese; 30 minutes wasn't long enough in the oven for a thick layer of it. I'm also thinking about adding chopped Tarragon next time. I think it could be a good addition. TBD!

No oven, so sauted chicken first, then under grill with the cheeses etc to finish. For me- halloumi?? Or meat free chicken?? No spinach, use other greens or mushrooms. Serve with savoury veg rice

Quite tasty but rich. Serve with a spoonful of marinara to cut through the fat.
