One Pan Pepperoni Pizza Orzo

Instructions

Step 1
Preheat broiler. In a large high sided sauté pan, heat olive oil over medium heat. Add shallot and cook for 2 minutes, stirring often. Add garlic and red pepper flakes and cook another minute, stirring often. Add sundried tomatoes and cook another minute. Stir in uncooked orzo and let it toast 2 minutes.
Step 2
Pour in pizza sauce and water. Stir to combine and bring to a boil. Add Italian seasoning. Turn heat to medium low and bring to a simmer. Stir occasionally to prevent the orzo from sticking to the bottom of the pan until the orzo is cooked through and most of the liquid is absorbed. Add more water if needed to cook the orzo. This should take about 15 minutes or so.
Step 3
Once the orzo is almost cooked, stir in parmesan cheese. Stir until the cheese is melted. Sprinkle mozzarella cheese in an even layer on top of the orzo. Lay the pepperoni on top of the cheese.
Step 4
Place in the oven and broil for several minutes until the pepperoni starts to crisp and the cheese is golden and melted. Sprinkle with basil and serve immediately.
