Tomato, Boursin, and Shrimp Baked Orzo

A fun spin on the viral baked feta pasta! This version swaps feta for creamy Boursin, adds shrimp and spinach, and cooks the orzo right in the same pan.

Ingredients
4 servings

1 packageGarlic & Herbs Boursin Cheese

1 ½ cupsOrzo Pasta
uncooked

1shallot
small, diced

4cloves garlic
minced

12 ouncesCherry Tomatoes
or grape tomatoes

¼ teaspoonRed Pepper Flakes
adjust to taste, optional

2 teaspoonsolive oil

3 cupsChicken Broth
I used no salt added broth

5 ouncesbaby spinach

1 poundShrimp
raw, peeled and deveined

½ teaspoonkosher salt
more to taste

¼ teaspoonBlack Pepper
more to taste
Instructions
Step 1
Preheat the oven to 400°F. Place the block of Boursin in the center of a 9×13-inch baking dish. Scatter the orzo around the cheese, then add the shallot, garlic, and tomatoes evenly on top.
Step 2
Season with red pepper flakes, salt, and black pepper. Drizzle with olive oil, then pour in the chicken broth. Cover tightly with foil and bake for 30 minutes.
Step 3
Check if most of the liquid has absorbed. If it still looks very soupy, bake for another 5–10 minutes.
Step 4
Remove from the oven. Stir in the baby spinach until wilted and the sauce comes together with the melted Boursin and burst tomatoes.
Step 5
Season the shrimp with salt and pepper. Arrange them in an even layer on top of the orzo. Bake uncovered for 10 minutes, or until the shrimp are pink and cooked through. (See Note)
Step 6
Divide into bowls and serve. Drizzle with extra olive oil if desired.
