Step 1
Drop the jalapeños, cilantro, and lime juice in a blender, then set aside.
Step 2
Defrost the shrimp by adding them to a bowl. This is optional, add sliced lemons and squeeze some lemon juice for added freshness.
Step 3
Drain the water then remove the tail off the shrimp, dice into about 3 small pieces, then add to a large bowl.
Step 4
Pour the blended lime juice and cilantro over the shrimp, cover, then refrigerate for 30 minutes.
Step 5
Remove the bowl from the fridge. Add the cubed red onions, tomatoes, cucumbers, smoked paprika, salt, and black pepper and mix.
Step 6
Scoop ceviche on tostados. Top with diced avocado and enjoy!
