We had this Peruvian chicken for lunch and it was SO good! We grilled some pineapple on the side and thought that went beautifully with this dish.

For the Chicken:
2 poundschicken thighs
boneless, skinless
5 clovesGarlic
Peeled
⅓ cupsoy sauce
2 tablespoonslime juice
1 tablespoonextra virgin olive oil
2 teaspoonscumin
1 teaspoonpaprika
1 tspfresh oregano
black pepper
Green Sauce
1 cuppineapple
sliced or largely cubed
For the Spicy Cilantro Dressing
Instructions
Step 1
For the chicken: Puree garlic, soy sauce, lime juice, oil, cumin, paprika, oregano and a pinch of black pepper in a blender.
Step 2
Put chicken in a large ziploc bag and add marinade. Place in refrigerator and allow to marinate for 8 to 24 hours.
Step 3
For the dressing: Combine all ingredients in a blender process until smooth. Transfer to a bowl and refrigerate until ready to serve.
Step 4
On a cast iron over medium-high heat, add the chicken (removed from the marinade) and cook for 4-6 minutes on each side. Use a digital thermometer to make sure internal temperature reaches 165°F.
