Foil Packet Salmon and Baby Broccoli

Ingredients
4 servings
6 Tbspolive oil
3 Tbspdijon mustard
2 Tbsphoney
1Lemon
juice
6cloves garlic
minced
2 tspgarlic powder
2 tspsalt
1 tspblack pepper
4 x 5 ozfilets Salmon
I used the Costco frozen Wild Sockeye Salmon, make sure to pat dry
12 ozBaby Broccoli
could also use broccolini or broccoli
4 Tbspbutter
divided
4 slicesLemon
cut into rounds
Instructions
Step 1
Preheat oven to 375 degrees.
Sauce Instructions
Step 2
Add all ingredients to a bowl. Stir well to combine until well emulsified. Taste, and add additional of any sauce ingredients as needed.
Other Instructions
Step 3
Rip off 4 big sheets of aluminum foil. Place a salmon filet in the center of each sheet. Divide the baby broccoli into 4 servings, 1 for each packet, and place around the salmon.
Step 4
Fold the edges up to enclose the salmon and baby broccoli.
Step 5
Evenly spoon the sauce over each foil packet to cover the salmon and baby broccoli. Place 1 tbsp of butter in the center. Finally place 1 slice of lemon on top of the butter.
Step 6
Fold up the foil more to mostly cover the ingredients, but leaving a little space to let the packet vent. You can rip off more foil if needed to enclose the ingredients.
Step 7
Place the foil packets on a baking sheet and place in the oven. Bake for about 15-20 minutes or until the salmon and baby broccoli are both cooked through.
