Ingredients

3bell peppers
1garlic bulb
3 Tbspolive oil
divided
½ tspmediterranean spice mix
150ggoat cheese
salt
to taste
pepper
to taste
½ tsppaprika
1 tsporegano
⅛ tspchilli flakes

Step 1
Preheat oven to 200C (fan)
Step 2
On a baking tray lined with parchment place the bell peppers and drizzle them with 1tbsp of olive oil.
Step 3
Cut off the top of the garlic, place it on a piece of aluminium foil, drizzle with 1tbsp olive oil and sprinkle with a Mediterranean spice mix. Wrap in foil and place on the baking tray.
Step 4
Roast peppers and garlic for 40 minutes, flip the peppers halfway through.
Step 5
When ready remove from the oven. Transfer peppers to the plate and cover with aluminium foil or cling film. Let them cool.
Step 6
When ready, deseed the peppers and pill off the skin. Transfer them to the food processor.
Step 7
Squeeze the garlic and add to the food processor too, followed by goat cheese, salt, pepper, paprika, oregano, chilli flakes and 1tbsp olive oil. Blend until smooth.
Step 8
Transfer cheesy mixture to the serving platter, drizzle with 1tbsp olive oil, sprinkle with chilli flakes and thyme leaves.
Step 9
Serve with toasted bread and enjoy!
