Soft and chewy cinnamon apple oatmeal cookies are filled with sweet apple flavour! It is a chewy cookie that has apple pieces, walnuts, and cinnamon throughout. After the cookies are baked, they're topped with a sweet maple glaze.

Ingredients

¼ cupunsalted butter
melted and slightly cooled
⅓ cupapplesauce
¾ cupsdark brown sugar
light brown works too
⅓ cupwhite sugar
1egg
room temperature
1 Tbspvanilla
2 cuprolled oats
1 tspcinnamon
¼ tspnutmeg
¼ tspbaking powder
¼ tspbaking soda
¼ tspsalt
1 cupall purpose flour
½ cupapples
finely chopped
¼ cupwalnuts
chopped
¾ cupsicing sugar
1 Tbspmaple syrup
Instructions
Step 1
Preheat oven to 350°F/180°C and line two baking trays with parchment paper. Set aside.
Step 2
In a large bowl, whisk together butter, white sugar, brown sugar, and applesauce. Whisk until well combined.
Step 3
Add in egg and vanilla and continue whisking.
Step 4
Add in flour, oats, nutmeg, cinnamon, salt, baking soda and baking powder. Using a spatula, gently fold until a soft cookie dough forms.
Step 5
Add in chopped apples and walnuts and mix in a few times.
Step 6
*If your dough is sticky and way to soft, stick in the refrigerator for 30 minutes prior to scooping*. Scoop 6 cookie dough balls on each tray at a time. Bake for 13-15 minutes or until the edges are a light golden brown and the middle is slightly puffy. The cookies shouldn't spread out to much.
Step 7
As the cookies cool, make the maple glaze by adding the maple syrup, icing sugar, and vanilla into a small bowl and mix. Once cooled, drizzle the cookies with the glaze, allow to set, and enjoy!
