Mediterranean Chopped Salad with Roasted Red Pepper Dressing

I used a 12oz jar of roasted red bell peppers and kept all the other dressing ingredients the same. This made the perfect amount of dressing.

Dressing and flavors are great. But don't mix it all together to have throughout the week, like she says to. Romaine gets soggy. Instead, add on the dressing when you're about to eat.
