This was a huge hit. Everyone loved it. The saltiness of the feta is a great compliment with the watermelon. I skipped the kosher salt (feta made it salt enough) and used fresh basil instead of the mint.

This one is so, so good. It's incredibly refreshing with the zing of mint in it. Even made it for a fancy to-do and kept getting asked for the recipe. A summer must. Ps. Add your salad dressing just before serving to keep the watermelon crisp.
