Instructions

Step 1
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

In a large mixing bowl, whisk together the almond flour, coconut sugar, baking soda, cinnamon, and salt.

Add the oats to the bowl and mix until well combined.
Step 4
In a separate bowl, whisk together the melted coconut oil, egg, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until a dough forms. If desired, stir in raisins or chocolate chips.
Step 6
Using a cookie scoop or spoon, drop the dough onto the prepared baking sheet, spacing the cookies about 2 inches apart.
Step 7
Bake for 10-12 minutes, or until the edges are golden brown.
Step 8
Remove from the oven and let cool for 5 minutes before transferring the cookies to a wire rack to cool completely.
