Instructions
Step 1
Preheat oven to 350F (176C) degrees.
Step 2
Grease two 9" x 5" (23 cm x 13 cm) loaf pans with baking spray.
Step 3
In a medium-sized bowl whisk together the dry ingredients and set aside.
Step 4
In a large bowl whisk together the eggs, sugar, pumpkin puree, oil, and water.
Step 5
Add the dry ingredients, into the wet ingredients, 1/3 at a time, being careful not to over mix! (Or you will have tough bread!)
Step 6
Add the raisins or chocolate chips if using.
Step 7
Distribute batter equally across two loaf pans. Top one with walnuts and top the other with Pepitas.
Step 8
Bake until a toothpick comes out clean, about 45-50 mins
