Ingredients
2 servings
8 ozBaby Bella Mushrooms
slice
1 Tbspolive oil
3cloves garlic
minced
salt
to taste
pepper
to taste
¼ tspRed Pepper Flakes
more or less to taste
½ cupWhite Wine
dry, or use chicken broth
1 tspdijon mustard
1 Tbspbutter
½ cupheavy cream
¼ cupParmesan Cheese
grated, additional to serve
8 ozPasta
I used malfaldine, use any shape you like
Fresh Parsley
chopped, to serve
Instructions
Step 1
Cook pasta to al dente according to package instructions. Reserve 1/2 cup of pasta water.
Step 2
Meanwhile, add the mushrooms in an even layer to a dry pan over medium-high heat. After about 5 minutes, the mushrooms will star to release moisture. Cook for another 5 minutes, stirring occasionally until the mushrooms are browned and have released most of their moisture. Adjust the heat as needed so the mushrooms become browned, but don't become too dry or burnt.
Step 3
Lower the heat to medium. Add olive oil, minced garlic, salt, pepper, and red pepper flakes. Stir to combine and cook for 2 minutes.
Step 4
Pour in the white wine, stir to combine, and simmer for 2 minutes. Then add the dijon mustard and butter. Stir to combine and simmer for another minute.
Step 5
Lower the heat to medium-low. Pour in the heavy cream and add the parmesan cheese. Stir until well combined and simmer for 3 minutes.
Step 6
Transfer over the cooked pasta and toss together with the sauce. Add splashes of pasta water as needed if the sauce is too thick. Season to taste with salt and pepper.
Step 7
Serve immediately. Divide among bowls and serve with fresh parsley and parmesan cheese as desired.
