Vietnamese Noodles with Lemongrass Chicken

I thought this was delicious and felt so fresh! Easy to make as well. I didn't have any bean sprouts in the house, so left them out this time, and used romaine lettuce as I didn't have iceberg, but it was still very good with this substitution. Will definitely make this again and have thought about this dish a few times since cooking it!

Wonderful flavour. My favorite chicken dish. Great for the BBQ or airfryer on skewers.

Everything's been off for me: Didn't enjoy the fresh sprouts in here (too bitter), the sauce was off, the mint tasted like toothpaste (might just have had the wrong kind), ...

Absolutely amazing recipe and just what I've been missing - took a bit of learning but I'll get better at it with a few more attempts. The flavours were spot on! SECOND ATTEMPT: Delicious even if you forget the lemongrass / realize it's gone bad and had to skip it (you can tell it's not there but still good). Didn't have mint so added extra cilantro... Have learned cooking the chicken on high heat to char the outside in small batches, setting aside, and then cook the remaining marinade down until it thickens then reintroduce the chicken to finish cooking after a quick slice is the best way. Sooo good.

Air fry for 20, flip half way Fish sauce, use half the amount for both

Would like to give both a thumbs up and a thumbs down. Not quite able to put my finger on it but the flavor wasn't it for any of us, though we're all lovers of all of the ingredients, especially lime and any kind of 🌶️. Would definitely go easy on the fish sauce and advise to keep tasting the sauce, preferably by more than one person since the fish sauce really makes it hard to taste and smell anything else 🤣 Cutting the carrots etc can be quite time consuming depending on the number of eaters and how finely chopped. And marinating also takes at least an hour but better even to increase.

I’ve never made anything like this before and was really surprised how easy it was and how good it tasted. I followed the recipe exactly except I didn’t chop the pepper for the sauce… I sliced it in half lengthwise and just let it soak in the sauce for flavour. Next time I’ll cut the lime juice for the sauce in half.

Delicious, flavourful and purely yum. Really enjoyed this and will make it again. I think this would be an amazing summer dinner.

So yummy. Just like an authentic Vietnamese restaurant. Really enjoyed the freshness and lightness of all the combined ingredients.

Deeelicious. I would definitely cook again, however it is very heavy on the fish sauce so I would probably ease up on that as my mouth smells like a mermaid fart. This is a very quick and easy mid week meal.
