Lemon Mascarpone Cookies

The proportions of the recipe are really wrong, not sure if it's the eggs or the lemon juice (which I added less of because it was already getting super sticky), they spread like crazy and turned out as cakes. It may be the mascarpone or the egg or the lemon juice, but the hassle is not worth risking whether they turn out right.

Yummy cake cookies with a nice fresh lemon flavor. I did add the zest of 4 small lemons because while reading reviews a lot of people mentioned the lemon was very light and our family LOVES lemon. These were delicious
