Instructions
Step 1
Start by soaking the cashews in boiling water for at least 30 minutes. Once soaked, drain the water and add the cashews to a blender along with the soy milk and nutritional yeast. Blend until you achieve a smooth consistency.
Step 2
Next, cook the pasta according to the instructions on the packet. Remember to save 1/2 cup of the pasta water for later use.
Step 3
While the pasta is cooking, finely mince the garlic and shallots. In a pan on low heat, add the olive oil, shallots, garlic, and chilli flakes. Cook for 2 minutes, stirring consistently to prevent them from burning.
Step 4
Add the tomato paste to the pan and cook for another 2 minutes, stirring frequently. Deglaze the pot with the vodka, if using.
Step 5
Stir in the blended cashew cream until well combined. Add the cooked pasta to the pot along with the reserved pasta water. Stir well to ensure the pasta is well coated with the sauce.
Step 6
Season with salt and pepper to taste. Add the vegan butter and stir until it has melted into the sauce. Finally, stir in the chopped basil leaves and vegan parmesan, if using. Serve hot and enjoy your Gigi Hadid-inspired Spicy Vodka Pasta!
