Instant Pot Olive Garden Zuppa Toscana Copycat

One of my favorite IP recipes I've found. I've made it for friends and they requested the recipe! Super easy, comes together quick, and makes plenty for leftovers. Can't go wrong with this soup.

This is now my favorite way to make Zuppa Toscana. It is so easy and is done quickly. This is a sure addition to my Fall/Winter meal plan rotation. I'm lactose intolerant so I added watered down coconut milk instead of half and half in the last step and it worked great. I might add some more potatoes and blend them up to make the broth a bit thicker next time.
