Cinnamon Sugar Roasted Sweet Potatoes

Instructions

Step 1
Peel and dice sweet potatoes into 1 in. pieces and place into a steamer.
Step 2
Bring a steamer pot to a boil and steam the potatoes for 5 minutes.
Step 3
Into a medium size bowl, add in all ingredients, except for the flakey salt.
Step 4
Mix together until all sweet potato cubes are well coasted.
Step 5
Add them to a baking sheet lined with parchment paper and spread them out evenly.
Step 6
Bake at 400F for 15 minutes, then remove and flip or toss potatoes.
Step 7
Add them back into the oven for an addition 20 minutes.
Step 8
Remove from the oven and add flakey salt (optional) or a little extra sprinkling of cinnamon and sugar.
Step 9
