Ingredients: 4 - 6 chicken thigh fillets (approx. 600 g); 20 g honey; 40 g tamari or soy sauce; 40 g almond butter; 1 fresh long red chilli; 1 lime, juice only; 1 bunch fresh coriander, leaves and stems; 200 g rice; 900 g water; 1 - 2 bunches broccolini, trimmed (see Tips); 80 - 100 g fresh baby spinach leaves; 2 - 3 tsp extra virgin olive oil, to drizzle
