This French Onion Mac and Cheese combines caramelized onions, melty Gruyère, and creamy, extra-cheesy pasta for the ultimate comfort food twist on French onion soup.

Ingredients
4 servings

1 tablespoonextra virgin olive oil

1 tablespoonbutter

3Yellow Onion
thinly sliced, use 2 onions if large

1 pinchkosher salt

3 sprigsfresh thyme

¼ cupsherry

1 teaspoonworcestershire sauce

8 ouncesPasta
I used shells

1 ½ cupswhole milk

¼ teaspoondry mustard

½ teaspooncayenne

¼ teaspoonsmoked paprika

½ teaspoongarlic powder

½ teaspoonblack pepper
1 teaspoonSodium Beef Base
Reduced, optional, add extra salt if omitting

1 cupCheddar Cheese
shredded, I used Caramelized Onion Cheddar Cheese

1 cupGruyère Cheese
shredded

2 tablespoonsbutter
melted

1 cuppanko breadcrumbs

⅛ teaspooncayenne

¼ teaspoongarlic powder

Kosher Salt

Black Pepper
to taste

¼ cupcheddar cheese shredded

¼ cupGruyère Cheese

¼ cupparmesan cheese grated
Instructions
Caramelized Onions
Step 1
Heat olive oil and butter in a Dutch oven or large pot over medium heat. Add onions and a big pinch of salt, stir, cover, and cook for 5 minutes.
Step 2
Lower heat to medium-low and cook, uncovered, for 30–40 minutes until deeply golden, stirring occasionally. Halfway through, add thyme sprigs.
Step 3
Deglaze with sherry, scraping up browned bits. Stir in Worcestershire sauce and cook until liquid reduces. Remove and discard thyme sprigs.
Mac and Cheese
Step 4
While the onions cook, boil pasta 1 minute less than package directions. Drain, reserving ½ cup pasta water.
Step 5
In a saucepan, melt butter over medium heat. Whisk in flour and cook 2 minutes until golden. Slowly whisk in milk, then add dry mustard, cayenne, smoked paprika, garlic powder, black pepper, and beef base (if using). Increase heat to medium-high and whisk constantly for 3-5 minutes until thickened.
Step 6
Remove from heat and stir in cheddar and Gruyère until melted and smooth. Taste and adjust seasoning. Stir the cooked pasta into the cheese sauce, adding reserved pasta water as needed if the sauce is too thick. Combine with the caramelized onions.
Topping & Assembly

Preheat broiler. In a bowl, mix melted butter with panko, cayenne, smoked paprika, garlic powder, salt, and pepper.
Step 8
Spoon mac and cheese into oven-safe crocks (or a baking dish). Sprinkle evenly with breadcrumb mixture, then top with cheddar, Gruyère, and Parmesan. Finish with a crack of black pepper to taste.
Step 9
Broil for 3-5 minutes until golden and bubbly. Serve hot.
