Holy Guacamole!!! This salad is super easy and yummy!!! My plan was to make this for my son's school lunches this week, as well as to him having a light supper for last night because I was making sheet pan pesto chicken ( with mushrooms) for his dad & I, which is low carb. Our son loathes mushrooms.
So I prepped the dressing & shallots already & I just had to fry up the thawed frozen corn & prepare the pasta. I didn't have cilantro, plus 10yo doesn't like it- I used parsley instead. My big stainless steel salad bowl was out of commission, so I just used my pasta pot to mix everything & let it chillax in the fridge for an hour, while I made the adult meal. ( That too, was already prepped, just had to chop up my chicken & throw everything on the pans and cover it in jarred pesto. )💪🙌
When it came to pasta salad time, my kiddo was eager to try it. He took a couple of bites & said it was REALLY good! Then after a minute he asked if I could chop up a dill pickle for him to put in his portion. He loved it!
This salad has the most amazing dressing ever! It's so creamy and delicious with the zing of lime juice & smokey flavour of the cumin & chili powder. I also loved the salty brineyness of the feta in it! It's brilliant!!!
Without hesitation, he asked for it in his school lunch today!💪🙌
