I’m not vegan but it looked so good so I had to try it and it was worth it!! Only changes I had made was I only had green peppers (explains the odd color), I kept the tomatoes out & added chicken! Super easy & I just threw it over some rice and it was delicious, would 100% make this again!

this was delicious! the right amount of spices, though if you like spicy then you can add more. it was super easy to make and we made enough for 2, we can eat of it tomorrow too! we added some shrimp too.
