Instructions
Step 1
To a sauté pan on low-medium heat, combine peach cobbler filling ingredients and sauté for about 10-15 minutes until peaches are cooked and slightly caramelized.
Step 2
Add peach filling to a blender and blend until pureed and set aside in a small bowl.
Step 3
Clean and add you cookies to the blender and blend until it biomes crumbles in another small bowl. Mix in a few tsp of coconut oil.
Step 4
Then add all your ice cream ingredients to the blender and blend until very smooth.
Step 5
To your popsicle molds, add in a few teaspoons of peach filling and the cookie mixture then pour the ice cream mixture in. Top with a few more small dollops of the the peach filling and cookie mixture and use a toothpick to mix together.
Step 6
Close the silicone molds and add popsicle sticks and freeze for several hours or overnight.
