or lamb - shoulder, chuck roast, or use stew meat, cut into 2-inch pieces

4 teaspoonssalt
one teaspoon salt per pound of meat

1 tablespoonpepper

1 tablespoonsolive oil

1onion
large, sliced

2oranges

4bay leaves

2dried ancho chilies
or sub other dried chilies like chipotles, guajillo chilies or chili negros
1chipotle peppers can
from a, plus 2-3 tablespoons of the chipotle “juice”, you can always add more at the end of cooking if not sure

6cloves garlic

2 ½ cupschicken stock
beef stock, or use bouillon cube and water

Juice from, or sub 1/4 cup lime juice

2 tablespoonsground cumin
or toast whole seeds and grind

2 tablespoonground coriander
or toast whole seeds and grind

1 tablespoonchili powder

1 tablespoonsdried oregano
or Mexican epazote

½ teaspooncinnamon

¼ teaspooncloves

1 tablespoonvinegar
