Ultimate Instant Pot Beef Barbacoa

Flavorful and easy to make.

Used only 1 chipotle pepper in adobo sauce. Served with black beans and sautéed peppers and onions for burrito bowls.

Delicious recipe. I did a whole can of Chipotle's to up the spice.

Its a bit more time consuming,but well wrth it. This is my second time making and we enjoyed it! I like to shred the beef and let it sit and soak up some of the juices for a bit.

I kept the sauce amount the same, but used half of the beef required. Probably should have used a little less since I had too much at the end. Not pretty, but pretty delicious!

I doubled the sauce recipe, made 9 lbs of chuck roast using the Instant Pot and pressure cooked for 90 min. The flavor was unbelievable and everyone was going back for more. Then I reserved some of the cooked liquid in Mason jars and used that for ground beef enchiladas later that week.
