2boneless skinless chicken breasts
large

1 teaspoonsalt

½ teaspoonblack pepper

1 ½ teaspoonschili powder

1 teaspoondried oregano

1 teaspooncumin

1 ½ teaspoonsminced garlic

3 tablespoonsdistilled vinegar

¼ cupolive oil

¼ cupwater

2 cupsromaine lettuce
fresh chopped

1 cupbrown rice
cooked

½ cupblack beans

½ cupcorn
salsa

½ cupshredded mexican cheese blend

¼ cuppico de gallo

¼ cupguacamole

¼ cupgreek yogurt
or sour cream

fresh cilantro
for garnish, optional

fresh lime
for garnish, optional
Instructions
To make the chicken
Step 1
Place chicken breasts and all marinade ingredients in a large ziplock. Make sure everything combines well, and refrigerate to marinate overnight.
Step 2
When ready to cook, remove from marinade and grill or cook stovetop on high heat until cooked through completely, about 5-6 minutes each side
Step 3
Chop chicken into small pieces. Cook again stovetop in olive oil on medium heat for 5 minutes, stirring occasionally, until chicken pieces get slightly crispy on the outside
