Pumpkin season is upon us and I am so excited! I could care less about fall except for the food, especially pumpkin. This pumpkin chia seed pudding is my first fall recipe of the year and it did not disappoint. Chia pudding is great for breakfast or dessert. I love making it because it is so easy and customizable. It is packed with fiber, protein and healthy fats. The pumpkin also adds a great fall flavor to this pudding. All you need for this pumpkin pie chia pudding is a handful of ingredients and your fridge. Assembling the chia pudding takes less than 5 minutes and then it sets in your fridge.
