This is my version of the famous Guatemalan dish kak'ik, which means "red and spicy" in Mayan. I use wild turkey legs here, but store-bought are fine, too.

large, husked and sliced in half

2dried guajillo chiles

peeled and quartered

2 tablespoonsachiote paste

½ cupfresh mint
minced

½ cupfresh culantro
minced, or cilantro
