Brown Butter Scallops with Parmesan Risotto

The amount of Parmesan was a bit much for me, I'll scale that back next time

We made this with scallops and shrimp with some lime juice in the rice. Very tasty!

Added lemon to spinach; risotto took longer than expected (maybe add less than half cup increments?)

We really loved this dish! We sauteed shallots in butter, added the scallops with fresh thyme, seasonings and fresh lime juice. We made a broccoli Parmesan risotto that we out the scallops on. It was very good!! ( Even our teenager liked it!!)

Delicious, special occasion meal. Made it again March 2025. It was delicious. The whole family enjoyed it.

I didn’t have grape seed oil so I used avocado oil. By the time the scallops turned golden brown, they were a bit overcooked. Could be the different oil. I will adjust next time. Despite that, it was delicious and I look forward to making again. The risotto was awesome. I used garlic scapes chopped up instead of garlic, as I had some I needed to use up.

Changed it up a bit, used cauliflower rice for risotto and used butter, garlic, and shallots in the sautéed spinach. 10/10 recommend!

Made a healthier version with unsalted butter and cauliflower rice! Delicious!! And much lower on that GI

Definitely took longer than anticipated, even with 3 cooks in the kitchen. But the end result was delicious. Would try again but not an every-week go-to.

Added bacon to the risotto, very good add.
