This was an excellent salad to throw together on a busy night. I used a roasted red pepper flavored quinoa that I bought from Aldi and instead of using the dressing in the recipe, I used a lemon and roasted garlic herb vinaigrette dressing. It was absolutely delicious! I also used roasted red pepper goat cheese that I found at Aldi and it complemented the salad very well. I will definitely be making this again and feel like adding shredded chicken would be very tasty!
