Ingredients

⅓ cuporzo pasta
uncooked
2 ouncesspinach leaves
finely chopped
1 ounceFeta cheese crumbles
1 ouncered onions
chopped
1 ouncepine nuts
toasted
1 ouncesun-dried tomatoes
chopped
1 ounceKalamata olives
sliced
2 tablespoonsolive oil
2 tablespoonsbalsamic vinegar
⅛ teaspoondried basil
⅛ teaspooncoarsely ground black pepper

Instructions
Step 1
Bring a small pot of water to a boil. Add the orzo and cook for about 8 minutes or until al dente. Drain, rinse in cold water and set aside.
Step 2
Toss the spinach, Feta cheese, onions, pine nuts, sun-dried tomatoes, and Kalamata olives in a large bowl. Add the cooked orzo and stir well.
Step 3
Whisk together the olive oil, balsamic vinegar, dried basil, and pepper. Pour over the spinach and orzo salad and toss.
Step 4
Taste salad and add salt to taste if necessary.
Step 5
Refrigerate and serve cold.
