Step 1
Season the scallops with salt and pepper

Meanwhile In a frying pan, warm up half the butter and half the olive oil, sautee the shallots and ginger until softened. Pour in the white wine and reduce it for a few minutes.

Add the orange juice, salt and pepper. Simmer until turning into a syrup
Step 4
In another Frying pan, warm up butter and olive oil, add the scallops and fry until they are golden on the outside and still soft on the inside (1 to 2 min each side)
Step 5
Serve the scallops with the orange and ginger sauce, garnish with edible flowers or herbs
