Instructions
Step 1
1) Preheat the oven to 425ºF and bring a large pot of salted water to a boil. Peel jicama, deep enough to get to the white part and trim off the ends and cut into 1/4-inch-thick slices.
Step 2
2) Add the jicama to the boiling water and cook until crisp-tender when pierced with a fork, about 10 mins. Drain and pat dry with towels.
Step 3
3) Spray jicama with Pam Cooking Spray and toss with spices until fully coated. Place on the baking sheet in a single layer.
Step 4
4) Bake until the fries are lightly browned and crisp around the edges, flipping halfway through cooking, about 30 mins total.
Step 5
5) Sprinkle with fresh parsley and enjoy with a side of sugar-free ketchup.
